‘Creamy’ Crockpot Vegan Chilli

Cozy Winter Slow-Cooker Recipe

the perfect addition= freshly baked biscuits

OK, I don’t know about you but my number one pet peeve is when bloggers tell you THEIR ENTIRE LIFE STORY before getting to the recipe. So let’s get straight into it because I will not do that to you 🫶

Ingredients:

  • 2 cups vegetable broth

  • 1 15 oz white beans, drained

  • 1 15 oz can of chickpeas, drained

  • 1/2 cup jalapeño slices, drained

  • 1 can of corn

  • 8 oz vegan cream cheese

  • 1 tbsp chili powder

  • 3 tsp garlic powder

  • 2 tsp maple syrup

  • salt, pepper to taste

  • 1 cup chopped bell pepper

  • 3/4 cup chopped white onion

  • 2 stalks celery, chopped

  • 1 sweet potato, diced

Instructions:

  1. Add all the ingredients except the cream cheese to the crockpot & mix together well.

  2. Set crockpot on low for 4-5 hours (the low setting ensures you get the most flavourful chilli)

  3. When there is 30 minutes left add the cream cheese.

  4. When the time is up, enjoy this easy, delicious chili! I love eating it with freshly baked biscuits, but you do you!
