Berry-licious Oatmeal Bowl
Delicious Breakfast Recipe
I go through phases of sweet or savoury breakfasts & ya gal is definitely in a sweet phase now!
This recipe is my go-to breakfast, and you can also make it as an overnight oat version if you are low on time in the mornings. Just place the oatmeal ingredients in a container & mix well, add toppings & place in the fridge overnight!
Ingredients:
Oatmeal:
1/2 cup quick-cooking oats
1-2 cups water or milk (depending on how thick you like your oatmeal)
1 tsp vanilla extract
1 small pinch ginger powder
1 tsp cinnamon
1 pinch salt
Toppings:
handful of roasted almonds
1 tsp coconut sugar
3 strawberries
1/2 banana
handful of blueberries
1 heaping tbsp yogurt (I like coconut or vanilla flavor)
1 tbsp strawberry jam
1 tsp hemp hearts
1/2 tbsp nut butter (I like almond or cashew)
Instructions:
Place 1 cup water + pinch of salt in pot, and bring to boil. At boil stir in 1/2 cup oats plus vanilla, cinnamon, and ginger powder. Turn the heat to low immediately, and let simmer with the lid on or off (they cook fast only take a couple mins!).
While oatmeal is cooking slice up a handful of strawberries, 1/2 banana and roasted almonds.
Place cooked oatmeal in bowl & top with toppings!
