Berry-licious Oatmeal Bowl

Delicious Breakfast Recipe

I go through phases of sweet or savoury breakfasts & ya gal is definitely in a sweet phase now!

This recipe is my go-to breakfast, and you can also make it as an overnight oat version if you are low on time in the mornings. Just place the oatmeal ingredients in a container & mix well, add toppings & place in the fridge overnight!

Ingredients:

Oatmeal:

  • 1/2 cup quick-cooking oats

  • 1-2 cups water or milk (depending on how thick you like your oatmeal)

  • 1 tsp vanilla extract

  • 1 small pinch ginger powder

  • 1 tsp cinnamon

  • 1 pinch salt

Toppings:

  • handful of roasted almonds

  • 1 tsp coconut sugar

  • 3 strawberries

  • 1/2 banana

  • handful of blueberries

  • 1 heaping tbsp yogurt (I like coconut or vanilla flavor)

  • 1 tbsp strawberry jam

  • 1 tsp hemp hearts

  • 1/2 tbsp nut butter (I like almond or cashew)

Instructions:

  1. Place 1 cup water + pinch of salt in pot, and bring to boil. At boil stir in 1/2 cup oats plus vanilla, cinnamon, and ginger powder. Turn the heat to low immediately, and let simmer with the lid on or off (they cook fast only take a couple mins!).

  2. While oatmeal is cooking slice up a handful of strawberries, 1/2 banana and roasted almonds.

  3. Place cooked oatmeal in bowl & top with toppings!
